GOOD GUT GRANOLA ~ APPLE & CINNAMON

A perfect low - cost, fibre filled healthy breakfast. For even more gut-health benefits top with live yogurt and fruit for an all round balanced start to the day 👌

This week I chose apple and cinnamon… Experiment with your favourite seeds, nuts, fruits or grains to create different varieties offering more sources of fibre!

Ingredients

50 ml Vegetable oil
75ml maple syrup or honey
2tsp vanilla extract
425g porridge oats
100g Mixed seeds ( I used sunflower,sesame and poppy seeds)
1tsp ground cinnamon
1/2tsp ground ginger
1/2tsp fine salt
100g flaked almonds
100g Sultanas ( or any fried fruit of your choice )
100g dried apple
40g Cold-milled flax seed (optional)

Method

1. Preheat the oven to 180. Mix the oil, syrup or honey and vanilla together in a large bowl.

2. Add the oats, seeds, spices and salt to the bowl. Mix well so everything is coated, tip onto 2 large baking trays and spread evenly.

3. Bake for 15 minutes, then stir in the flaked almonds and bake for a further 10-15 minutes until golden crips and smelling toasted. Leave to cool.

4. Add all dried fruit to the granola and mix well. Store in air tight containers for 3-4 weeks. Serve with yogurt or any milk or your choice!
