Elderflower, Cucumber & Mint Mocktail

This recipe is a very British culmination of flavours - combining zesty lime and mint, refreshing cucumber and sweet elderflower cordial with soda water making a perfect non alcoholic spritz… or in our case a post class refreshment!

Ingredients

  • 2 limes, finely sliced 

  • 4 large mint sprigs, leaves picked, plus extra sprigs to garnish

  • 10 cm piece of cucumber

  • 150 ml elderflower cordial

  • 1 1/2 l soda water 

  • ice, to serve

    Directions

  • Step 1 Put the lime slices and mint leaves into a large jug. Using a y-shaped vegetable peeler, shave the cucumber into ribbons (discard the seedy core). Add to the jug and pour in the elderflower cordial and soda water. Gently stir to combine and add some ice to chill.

  • Step 2 Fill 10 tall glasses with ice and pour in the mocktail. Garnish with the mint sprigs and serve.
