Chicken and Pineapple Stir fry🍍



This stir fry with a tropical twist is the perfect way to brighten up your mid week meals! Super easy to make and full of goodness 💚 serves 4.

Ingredients
- 500g diced chicken breast
-1/2 red onion
- 1 red pepper sliced
- 1 green pepper sliced
- 1tbsp Soy sauce
- 1 tbsp rice vinegar
-1/2 tsp garlic granules
- 1 tsp Siracha sauce
- 2 tsp granulated sweetener or honey
- 320 g pineapple chopped
- 4 spring onions sliced

To Accompany ~ White basmati rice

Method

1, Spray a large frying pan with low calorie spray and place over a medium heat. Add the diced chicken and fry for 5 minutes until it has browned on all sides. Add the red onion and peppers and fry for a further 5 minutes.

2, Place the soy sauce, rice vinegar, garlic granules, siracha and granulated sweetener into a small bowl and mix.

3, Add the pineapple to the frying pan and pour over the sauce. Stir until the chicken and vegetables are coated and cook for a further 5 minutes until the sauce has thickened and become sticky.

4, Stir the spring onions through, season to taste and serve 🍴
