Peanut & Date Caramel Bars

Attention all lovers of thing’s gooey and delicious! These Vegan Peanut & Date Caramel Bars are tooooo good!

Ingredients: 

BASE

* 100g rolled oats

* 150g ground almonds

* 2 tbs coco powder

* 160g dates

* 8tbs coconut oil

* Pinch of salt 

CARAMEL

* 160g dates

* 4tbs smooth peanut butter

* 2 tbs water

* 4 tbs maple syrup 

TOPPING

* 100g dark 70% chocolate

* 100g chopped salted nuts

* 100g Sultanas & raisins 

Instructions

1. Combine oats, almonds, coco powder, salt and dates and blitz in a food processor until a paste is formed. Add coconut oil and spread in baking tray to form the base. Leave to set in the fridge. 

2. Add dates and water to a sauce pan and gently simmer until the dates become soft. Add maple syrup and peanut butter and stir until the mixture turns to a caramel like consistency (blitz in blender if needed)- At this point try not to eat all of the mixture... 3. Spread the caramel on to the base and place back in the fridge for 1 hour. 

4. Sprinkle the nuts and sultanas onto the top. Melt the chocolate and drizzle on top. 

5. Place back into the fridge for 1 more hour to fully set.
