Banana Coconut Cookies - Vegan, Gluten Free & Dairy Free

I know what you’re thinking… These Banana Coconut cookies, aka super healthy oatmeal cookies are flourless, eggless, sugar-free and dairy-free … umm… “ Are these edible?!”

Trust me on this one…

Being a lover of all things sweet I find myself often reaching for the biscuit tin, therefore I do my best to fill it with natural, healthy treats. Banana + Coconut + Maple Syrup = Naturally unrefined sweetness!

INGREDIENTS

  • 150g Rolled Oats

  • 75g Ground Almonds

  • 100g Desiccated coconut

  • 1 pinch of salt

  • 1/2 tsp Ground cinnamon

  • 1/2 tsp Baking powder

  • 2 Bananas peeled and mashed

  • 1/2 tsp Vanilla extract

  • 6 Tbsp Coconut oil gently warmed into liquid

  • 4 Tbsp Maple syrup

  • 2 Tbsp Extra-virgin olive oil

  • 50 g Raw cacao nibs

INSTRUCTIONS

Preheat the oven to 180 degrees Celsius and prepare 2 baking sheets with unbleached parchment paper.

  1. In a large bowl, mix together the oats, ground almonds, coconut, sea salt, cinnamon, and baking powder.

  2. In a second bowl, mash the bananas well, then stir in the vanilla extract, maple Syrup, melted coconut oil and olive oil. Add the wet ingredients to the dry ingredients and stir until combined; fold in the cacao nibs.

  3. Using 2 tablespoon full of mix, and use your fingers to round the cookies and flatten them a bit.

  4. Bake for 20-22 minutes until golden on the edges. Leave to cool for a few minutes, then carefully transfer to a wire rack to cool completely. They will be fragile until they are completely cooled down.
